We've got them in all colors & at all stages. Some are already ready & ripe, while others are still green. We put them up on the sill by the sink where they can get some sunlight and continue to ripen and then dry out. Then once they're done drying out, well probably cut the stems off, remove the seeds, and powder them down in our coffee grinder:-)
